在以前「臘」和「腊」是两个不同的字。臘肉，意思是腌制的肉类。腊肉，意思是干肉。汉字简化后，「臘」字并入了「腊」字，所以在简化字环境下见到的「腊肉」就有两种不同的读法，对应两种不同的含义。第5版《现代汉语词典》里同时收录了la4腊肉和xi1腊肉两个词。la肉解释为冬天（多在腊月）腌制后风干或熏干的肉；xi肉解释为干肉。
